Chicken Supreme

A healthy, low fat,
low cost recipe.
Total Cost: $8.00 Serves: 4 at
$2.00 per serving.
Ingredients:
- 4 chicken breasts, skinless and boneless
- 1 cup of 99% fat free chicken broth
- 1/4 cup onion, minced
- salt
- lemon pepper
- season salt
- fat free butter spray
- 2 Tablespoons lemon juice
- 2 Tablespoons spicy mustard
- 1 Tablespoon Cornstarch
Directions to Prepare:
- Sprinkle both sides of chicken with lemon pepper
and salt and cook on the grill until juices run clear.
- While chicken is cooking:
- Sauté onions in butter spray until tender.
- Pour in chicken broth, lemon juice, and spicy
mustard.
- Cook over low heat, meanwhile make cornstarch
mixture (mix cornstarch and cold water until smooth in
separate bowl).
- Bring gravy mixture to a boil, then stir in
cornstarch mixture.
- Continue stirring gravy until is reaches
desired consistency.
- Remove from heat and cover to keep warm.
- Serve gravy over grilled chicken.
Meat Tenderizing Tip: 1/4 c vinegar, 2 T oil
and spices of your choice (Italian dressing works good) with meat in
a sealed bag for a minimum of 2 hours.
