Red and Green
Bean Salad

A healthy, low fat,
low cost recipe.
Total Cost: $10.00 Serves: 4 at
$1.50 per serving.
Ingredients:
- 16 ounces green beans, drained
- 8 ounces of kidney beans, drained
- 3 green onions, chopped
- 1 6 ounce jar of marinated artichoke hearts
- 1/2 medium red onion, chopped
- 1/2 medium red or green pepper, diced
- low fat or fat free Italian dressing
Directions to Prepare:
- Combine green beans, kidney beans, onions, and
peppers in a large bowl.
- Stir in artichoke hearts and Italian dressing.
- Chill a minimum of 10 minutes, overnight is better.
- Serve on a bed of lettuce if desired.
Salad Tip: Make a radish rose by cutting
through the first layer at several points around the radish then
peel peel back sections, leaving a white center.
