Swiss Steak

A scrumptious,
low cost meal.

Ingredients:
- 5 cube steaks, tenderized
- 2 Cups Italian bread crumbs
- 4 large eggs, beaten
- 1/8 Cup milk
- 2 Tablespoons oil
- 1 green pepper, sliced in thin
rings
- 1/2 onion, sliced in thin rings
- 1/2 Cup mushrooms, canned or fresh,
sliced
- 2 Cups Italian seasoned tomatoes,
diced
- 2 Cups tomatoes with green chilies,
diced
- dash of salt, pepper, and garlic
Directions to Prepare:
- Preheat: oil in large non stick skillet.
- Combine:
Eggs, milk, salt, pepper, and garlic in large bowl.
- Place: Italian bread crumbs in large bowl.
- Dip :
Cube steak in egg mixture.
- Coat:
Cube steak in Italian bread crumbs..
- Place:
In skillet and brown cube steaks on both
sides over medium heat..
- Layer:
Onions, green peppers, and mushrooms on
top of steaks.
- Pour:
Diced tomatoes over top.
- Simmer:
Over low heat until until juices from steak run clear,
approximately 20 minutes.
- Serve:
With steamed vegetables and corn muffins.
Meat Tenderizing Tip: 1/4 c vinegar, 2 T oil
and spices of your choice (Italian dressing works good) with meat in
a sealed bag for a minimum of 2 hours.
