Vegetable Soup

A healthy, low fat,
low cost recipe.
Total Cost: $2.80 Serves: 4 at
$.70 per serving.
Ingredients:
- 16 ounce package of frozen stir fry vegetables
- 2 Tablespoons chopped onions
- 3 beef bouillon cubes
- 1 1/2 teaspoons garlic, minced
- Creole seasoning
- Chili powder
- Olive oil spray
- 8 ounces tomato sauce
- 16 ounces of chopped tomatoes
- 1/2 Cup of Mexican style chili beans
Directions to Prepare:
- Spray 3 quart sauce with olive oil spray
- Sauté garlic and onion until onions are tender
- Add in vegetables and continue stirring until well
mixed
- Stir in chili beans, tomato sauce and chopped
tomatoes; bring to a boil
- Season to taste with chili powder and Creole
seasoning
- Simmer until vegetables are tender
Salad Tip: Make a radish rose by cutting
through the first layer at several points around the radish then
peel peel back sections, leaving a white center.
